Campbell Soup has always been something you'll find at our house, so when I was asked last fall to be a part of The Wisest Kid in the Whole World campaign I was really excited.
Campbell Soup Recipes have always been a great way to whip up dinner for the nights on the go, and are fun and easy enough that I can get the Kiddo to help out instead of him watching TV or on some other screen while sitting on the couch before heading off to basketball, football (or fill in your own sport here).
You'll often find us making tacos or burritos for dinner, since it's so quick and easy, so this Campbell Soup Recipe was a delicious twist on something we usually make on a fairly regular basis. It's become one of our favorites:
Beef and Bean Burritos
1 pound of ground beef
1 can of Campbell's Condensed Bean with Bacon Soup
1 cup Pace Chunky Salsa
8 flour tortillas
Shredded Cheddar cheese
Sour cream (optional)
1. First cook the beef in a 10-inch skillet until well browned, stirring often to seperate the meat. Pour off any fat.
2. Stir the soup and salsa in the skillet and cook until the mixture is hot and bubbling, mashing the beans with a fork
3. Spoon about a 1/2 cup beef mixture down the center of each tortilla. Top with cheese or additional salsa and sour cream, if desired
